Addictive like potato chips.

I don’t think my mom used Kale even once when I was growing up. It wasn’t her thing. We all tend to gravitate to a certain 10 or so veggies, don’t we? I’m not even sure who introduced me to Kale or when I started using it. Might have been culinary school, but I certainly can’t remember graduating with a fist full of new kale recipes. And I don’t think anyone ever said, “You should saute it and eat it for breakfast!” But somehow, kale and I found each other. He’s my trusty, go-to, I need a lift breakfast. He never fails me. Each time I finish a plate of my dear friend kale, I feel better, more energetic, and I think, “I should eat kale every single day.”

Sometimes I do just that, and sometimes I don’t, but when we drift apart, I find him again. Looking all handsome and lush on an especially sunny farmers’ market morning. Just waiting for me to chop him up and appreciate him again.

This breakfast is simple, but addictive like potato chips, which is exactly how I like to season kale, think sea salt and fresh cracked pepper kettle chips. I made this simple kale for a friend one visit. And to be honest, I wasn’t sure if she would like it. John and I do, but I’m a little weird and really, so is he. But when I asked her last week if there were any recipes she wishes were on the blog, she quickly answer, “Breakfast Kale.” Well, I’ll be.

Now keep in mind, there is a big stalk running down the middle of kale that isn’t very tasty. It’s edible, but it’s too tough to enjoy. Here’s a video to show you how to best strip kale from it’s stalk:

    Your mom used 10 different vegetables? Wow. We had broccoli, green beans, peas, salad, and does corn count as a vegetable? Occasionally she would use carrots or green peppers as a flavoring. I love kale. I like to add lots of garlic and a dash of vinegar and top it with a fried or poached egg.

    Chef Runner – 10… I think so? I'd have to count, but she's a pretty solid cook. We actually are writing a cookbook together! But, no Kale. Also, garlic and vinegar sounds divine… :)

    I just tried the 'breakfast kale'… the taste was amazing! however, the toughness of the kale was a bit of work to get through… did i do something wrong or am i just a wimp?
