Reminiscent of everyone’s childhood.

When I grew up (the processed food loving 80’s), tacos were made from factory-farmed ground beef and an MSG loaded seasoning packet. Re-fried beans directly from a can. Only Hal, the packaging manager at the local food canning plant, knew exactly what oil went into those beans. As a private chef, the ultimate challenge is finding kid-friendly meals that parents crave, too. Those rare meals that feed the whole table are treasures, saved for the time-sensitive evenings when I need to slip out for a movie-date with John.
Like spaghetti with a great marinara sauce, tacos seem to please folks across the board. Reminiscent of everyone’s childhood, tacos are interactive, which seems to promote lively conversation and a laid back atmosphere. But our taco seasoning packet ways need a little face-lift, and without too much effort, tacos can be easy and healthy. No need to throw the baby out with the bathwater. (Nothing like a dirty bathwater analogy as an appetizing introduction to a recipe, right?)
So, here’s your very own Homemade Taco Meat and Traditional Re-Fried Beans recipes, as well as a list of standard taco toppings. I use bison meat (also called “buffalo” here in the US) for my tacos. Bison is a delicious, nutritious meat that has not been significantly altered by our factory farming ways. It has remained mostly wild and mostly grass-fed, plus bison are native animals to the North America. As for the re-fried beans, I use pastured lard to cook the beans. Pastured means that the pigs have had plenty of room to roam about and live a healthy pig life. Lard from well-treated animals was a super-food of the past, and I feel it will re-gain its status in the future. If you have trouble sourcing lard, I often use a reputable company called US Wellness Meats.

Mmmm, this looks yummy! Would be great with ground turkey too, for those who don't cook with ground beef =)

Thanks for coming by to all three of you!
Ashley – It is really good with ground turkey. I have made it with that many times. These specific measurements of spices are for beef, but just add a little more or less for turkey to suit your palate. Thanks again for coming by!
