Roasted Corn Medley Dinner, by David Schrecengost

I’ve often joked about my cooking prowess by saying that my repertoire consists of things that begin with the letter P……..peanut butter, popcorn, potato chips, pancakes, potatoes (baked). But, that’s OK when you live in a house with a wife that is a phenomenal cook and a daughter who has prepared meals for people and been paid to do so. As long as I cut the grass, wash the cars and occasionally make the bed, I go my merry way to work each day and come home to meals to die for.

After spending the first 22 years of my work life teaching, I have now been “on the road” in sales for the past 23 eating out in restaurants throughout the United States and can honestly say that I get much better meals at home than I do on the road. This has been going on for years and I’m one lucky guy. Now that Molly has devoted her energies to becoming a personal chef, I am surrounded by not only good meals, but healthy meals. My two women are committed to changing the eating habits of today’s world. I now know more about sea salt, coconut oil and trans fats, things I didn’t know existed five years ago, than I do about ipods, facebooks and twitters. And, I must admit, the whole scene is a little contagious.

So, I’ve started to dabble in the cooking world. Last night was the second full meal that I’ve done in the last two weeks. Oh, it wasn’t a smooth operation trying to get everything finished at the same time, especially when you knock a fry pan full of coconut oil, diced onions and carrots off the counter in midstream (made for a sticky floor to say the least). But, when I sat down with the girls to eat I had a sense of satisfaction. Grilled Chicken, Roasted Corn Medley, Grilled Vidalia Onions, Sliced Tomatoes and Cucumbers followed by a dessert of Blueberries & sliced Strawberries with Homemade Whip Cream and kudos from the two experts. I think the praise that was heaped on me was two-fold. The meal was actually pretty good and perhaps this would lead me into more than cutting grass, washing the cars and occasionally making a bed.

Since Molly has become such a devotee of eating healthy, I am much more conscious of what I put into my body and once I finally do retire and get off the road, where it is harder to get a healthy meal, I actually look forward to becoming much more proficient in the kitchen. I have no doubts that eating healthy is the key to less dependence on medicines and a better quality of life. I won’t be around to see it, but I can see the obituary for people of the future………”John Smith passed away at the age of 132. He died of nothing.”

Roasted Corn Medley

Ingredients:
1 tbsp unrefined coconut oil
1/2 medium sweet onion, diced*
1 large carrot, peeled & diced
5 ears of fresh corn, shucked
1 medium zucchini, diced
1 medium squash, diced
sea salt & fresh cracked pepper, to taste
dash of cayenne pepper

Instructions:
Turn on the grill to medium heat. While that is preheating, melt coconut oil in a large saute pan over medium heat and add the onions & carrots. Saute until cooked through and slightly browned, approx 5 minutes. Turn off the heat and head to the grill with your corn. Without oil, add the corn to the grill turning occasionally until cooked through with nice grill marks, approx 12 minutes. Return to the kitchen, turn the heat back to medium under the onions/carrots and add the zucchini and squash. Saute until just cooked through, approx 7 minutes. While waiting on the zucchini, cut the corn off the cob and set aside. Once zucchini/squash has cooked, fold in corn, season with sea salt, pepper and cayenne. Cook until corn warmed through and serve!

* Dad uses Vidalia Onions, regional to the Southeast, but any sweet yellow onion will be delicious.

Note from Molly – Great job Dad! Although you have successfully branched out beyond the “p’s”, I still demand that Popcorn of yours! Nobody cooks Popcorn like you do… Love you!

    I made this last night and it was INCREDIBLE!! so light, yet really tasty! Thanks Dave, I never cooked with coconut oil before and now I'm a fan (ok I don't really ever cook, but nonetheless it was my first time).
