Hot Bacon Dressing
Hot Bacon Dressing

Ingredients:
3 tbsp bacon fat, reserved from cooking bacon
1/4 cup finely chopped sweet onions
1 pastured egg
1 cup filtered water
2 tbsp unfiltered apple cider vinegar
1 tbsp real maple syrup
1 tsp arrowroot
1/4 tsp sea salt
2 dashes cayenne pepper (optional)
1/2 cup cooked & crumbled bacon (approx 6 strips)
Instructions:
In a large saute pan over medium-high heat, add bacon fat and heat until glistening.
Add chopped onions. Cook for 3 minutes, stirring occasionally; onions will be softened and slightly browned. While onions are browning, locate a glass jar with a tight-fitting lid.
To the jar, add egg, water, apple cider vinegar, maple syrup, arrowroot, sea salt and cayenne pepper. Put on the lid and shake vigorously, until well-combined. Once onions are cooked, turn the heat down to medium and add cooked bacon to the pan.
While whisking, pour the egg mixture into the hot pan. Continue to whisk constantly until the dressing thickens. Serve warm.

Yes, you can just warm gently over low heat to reheat. It may separate a little. Give it a good whisk right before serving, and you should be good.

My mom used to make a dressing similar to this one when I was a kid. I can’t wait to try your Mom’s version!! I have all of the ingredients in my kitchen…I think I’ll make it today. :)

Came over from Healthy Home Economist’s Carnival….tried this dressing for dinner (with a few changes – because I’m incapable of making a recipe as written!) and not only did we have it on our Spring Greens, we also used it as a sauce for our grilled chicken and asparagus. It was super yummy! I’m already thinking of when I can make it again!
