Raw Honey Lemonade

Raw Honey Lemonade
Yield – 8 cups

Using a blender to quickly emulsify the lemon and honey, enables the cook to preserve the beneficial enzymes and delicate nature of unpasteurized raw honey.

Ingredients:
1 cup raw honey
1 cup fresh-squeezed lemon juice
6 cups filtered water

Instructions:
In a blender, combine raw honey and lemon juice.  Blend on high for 30 seconds.  Add water to blender.  Pulse until combined.  Chill until service.  Serve over ice.

    Love the blender idea to combat the hardened honey! Have you tried adding some whey and fermenting it? I’ve been making the NT “Punch” but have used rapadura instead of honey. I think the honey will be much more delish. :)

    I tried this this summer too.. I found the combo really gross, for some reason, although it seemed like it would be perfect. The honey was such a strong flavor, even when it was still quite tart. Did anyone else think this?

    Molly I love that lemonade. Happy that I got to try some before I left. It makes the lemonade taste like it’s got some real soul to it. Definitely the best surprise recipe to come from farm living so far. Can you send some to South Africa for me?
